Simple Arugula Salad2017-05-10

This arugula salad is as basic as it gets. The dressing should be the main focus but you still want to be able to taste the pepperiness of the arugula and the sharpness of the parmesan cheese. Use good quality olive oil because you want it to have flavour and taste, unlike grapeseed oil which is flavourless. Also, get good quality parmigiano, from Italy. It should have the rind and not be dried out (and also not pre grated or shredded which is likely not the real thing). Use a vegetable peeler to get long thin slices. This salad is great as a starter to lasagna, pasta, chicken parmesan or as a side salad to a sandwich for lunch. I like its simplicity paired with more interesting main course since the salad doesn’t compete with other bold flavours.
- 6 cups arugula
- ½ cup – 1 cup shaved parmigiano
Basic Lemon Dressing
- ¼ cup olive oil
- 1 tsp honey
- 1 ½ tsp lemon zest
- 1/4 cup (about ½ lemon) lemon juice
- Salt and pepper to taste
Whisk all ingredients together and drizzle over lettuce.
Shave parmigiano over top before serving.
