This maple butter may have been one of the best discoveries I have made. There are versions of this that only use maple syrup but they require thermometers and cooling and heating and then cooling and mixing and are super finicky and may not even work. And really, who has time for that. This on the other hand works amazingly and is super addictive. This recipe does make a lot so you could cut it in half…by why would you?? We used it for our dessert and maple walnut grilled cheeses but at home I have also been putting it on waffles, pancakes, cinnamon raisin bread, spoons…..you get the idea. Let me know what else you have been putting this on. It would also be great with a pinch of cinnamon!
- 1 Cup Maple syrup
- 1 1/2 sticks (3/4 cup) unsalted butter cut into small pieces
In a medium pot bring the maple syrup to a boil for over high heat for 10 minutes.
Add butter in, turn off the heat and stir until fully melted.
Pour into a stand mixer and with the paddle attachment mix starting on slow and slowly increasing to high speed until it becomes very pale in colour and thick and fluffy (about 10 minutes). This is when your kitchen starts to fill with the incredible aroma of maple!
Cover and refrigerate.
