Greek Salad with Kale2017-06-17

This is a great take on a traditional Greek salad which usually doesn’t have any greens. I like kale as an addition because it can stand up to the dressing without getting soggy. We also added in home made pita chips for a fun crunch instead of croutons. You can find the recipe for them here. You can also watch a video here on how to massage kale for a salad.
- 1 bunch of kale
- 1 ½ English cucumber
- 1 tomato
- ¼ red onion
- 5 Tbsp crumbled feta cheese
- Pita chip croutons
- ¼ cup olive oil
- 2 Tbsp red wine vinegar
- 2 tsp dried oregano
- 1 Tbsp chopped mint
- Salt and pepper to taste
Preheat oven to 350F. Prepare Pita Chips according to recipe.
Clean, cut and massage kale and place into large bowl.
Cut the cucumber in half, deseed and cut into medium size half circles.
Remove the seeds from the tomato and cut into eighths.
Very thinly slice the red onion.
Mix all of the dressing ingredients together and use a fork or whisk to mix together well.
Toss the vegetables and kale with the dressing and top with feta cheese and pita chips.
