Classic Chicken Noodle Soup

This is a basic chicken noodle soup recipe. If you want to add more flavour to your stock, try adding fresh herbs like dill, thyme, oregano, parsley, etc. I like this recipe because it takes less than an hour to make and is pretty flavourful.


  • 1 whole chicken (3½-4 pounds)
  • 6 carrots, peeled and chopped
  • 4 celery stalks, chopped
  • 1 large yellow onion, quartered
  • 2 teaspoons kosher salt
  • 1 teaspoon black peppercorns
  • About a ½ package of flat egg noodles


Step 1

Add carrots, celery, onion and whole chicken to large stock pot.

Step 2

Add cold water, just enough to cover ingredients.

Step 3

Add kosher salt and peppercorns and then bring to a boil.

Step 4

Reduce heat and simmer for 50 minutes, skimming any foam off of the top.

Step 5

Remove chicken from stock and let cool.

Step 6

Strain onions and peppercorns from broth and discard.

Step 7

Shred chicken meat and add back into pot.

Step 8

Add egg noodles and bring to a boil.

Step 9

Cook until noodles are at the desired consistency.
