The tart and slightly sweet creamy ricotta and mascarpone filling paired with caramelized sugar brings this dessert grilled cheese to another level!
- Maple butter
- Cinnamon raisin bread (thick cut)
- ¾ cup smooth ricotta
- ½ cup mascarpone
- 2/3 cup powdered sugar
- Zest from ½ lemon
- 2 TB lemon juice
- Optional: 2-3 TB semi sweet chocolate chips, chopped up (mini chips or chocolate shavings also work)
Spread maple butter on front and back of the bread.
Mix ricotta, mascarpone, powdered sugar, zest and lemon juice in a bowl with a spoon until smooth.
Add chocolate to cheese mixture.
Spread cheese mixture on bread and place second piece of bread on top.
Place in panini press for 1-2 minutes. Because of the sugar in the butter the outside will be a bit darker then the other versions or what you are used to. Keep an eye on it because the maple butter can turn from caramelized to burnt fairly quickly.
