Balsamic Tomato Salad

I love this tomato salad as a quick side dish when tomatoes are in season. This really isn’t worth making in the winter because the tomatoes won’t have enough flavour. I am probably one of the least picky eaters and I love all vegetables except for cherry tomatoes, unless they’re prepared like this. Once they are cut into small pieces and seasoned I could eat a whole bowl but when they are thrown into a salad whole or cut in half I want nothing to do with them. This is a great side dish to a BBQ dinner, roast chicken, steaks, pasta, whole grilled fish…the list goes on!


  • 2 cups cherry tomatoes
  • 4 tsp olive oil
  • 1 garlic clove, crushed in garlic press
  • 2 tsp balsamic vinegar
  • 2 Tbsp chopped soft herbs (I like basil and chives but mint, parsley or coriander would work great as well)


Step 1

Chop tomatoes into quarters or eighths if they are bigger.

Step 2

Toss with all other ingredients and taste for seasoning. Add salt and pepper as necessary.
