I love serving crostinis for a party or as a little bite before dinner for my family. This Avocado Toast Crostini is a play on everyone’s favourite avocado toast with a couple additions. They would also be great with a little sprinkle of chili flakes.
- 1/3 baguette
- 3-4 Tbsp olive oil
- 3/4 avocado
- ½ lemon
- 3-4 radishes
- ¼ red onion
- Coarse sea salt
Preheat oven to 350F.
Cut the baguette on the bias into thin slices, about ¼ inch thick.
Place on a parchment lined baking sheet and drizzle with olive oil.
Bake in the oven for about 10-15 minutes,, until they become crispy.
Place avocado in a bowl and lightly mash with a fork. You don’t want it too smooth. Do this just before serving so that stays bright green.
Slice radish into thin rounds using a knife or a mandolin.
Shave red onion into very thin slices with a knife or mandolin.
Slice lemon into wedges.
Once toasts have cooled put a little avocado on with a fork and press down.
Top with 3-4 slices of radish, 2-3 slices of red onion, a squeeze of lemon and a pinch of salt.
